Origin: Bulgaria
Botanical Name: Aspalathus Linearis
Other Names: Red Bush Tea, Red Tea, Rooibos Tea

Rooibos (Aspalathus linearis) is a plant from the legume family (Fabaceae) and grows only in the Cederberg region of South Africa. Its fine leaves are harvested, fermented, and dried to make tea. It naturally contains no caffeine.

Rooibos can be used in various ways in the kitchen. Besides being enjoyed as a hot or iced tea, it can be added to smoothies and cold drink recipes. It can be prepared with plant-based milks and used to add aroma to fruit juices. In desserts, especially in cakes, cookies, and puddings, rooibos tea can be used instead of liquid ingredients to create a unique flavor. It is also preferred as a base for ice cream, sorbets, and other cold beverages. Rooibos has a naturally mild, smooth, and slightly sweet taste. It is often described as having honey-like, woody, and subtly earthy notes. Some people also notice a light vanilla or caramel-like aroma, especially when it is brewed a little longer.

Using: To prepare Rooibos tea, steep 2 teaspoons of rooibos in 500 ml of hot water in a covered container for 3–4 minutes, then strain. It can be enjoyed hot or cooled and served as iced tea.
For iced Rooibos tea:
After brewing, add lemon juice and, if desired, honey or another sweetener. Let it cool, then place it in the refrigerator until completely chilled. Serve cold, optionally with ice cubes.
