Origin: Bulgaria
Botanical name: Rosmarinus officinalis L.

Rosemary is an aromatic evergreen shrub with leaves similar to hemlock needles. It is native to the Mediterranean region, but is reasonably hardy in cool climates. The leaves are used to flavor various foods, such as stuffing and roast meats.
Rosemary leaves are used as a flavoring in foods, such as stuffing and roast lamb, pork, chicken, and turkey. Fresh or dried leaves are used in traditional Mediterranean cuisine. They have a bitter, astringent taste and a characteristic aroma which complements many cooked foods. Herbal tea can be made from the leaves. When roasted with meats or vegetables, the leaves impart a mustard-like aroma with an additional fragrance of charred wood that goes well with barbecued foods.
Rosemary has a rich content of vitamins A and C and minerals such as iron, magnesium, phosphorus, zinc, copper, thiamine and riboflavin.
Using: Boil 1 cup of water. While the water is heating, place 1 teaspoon of dried rosemary leaves into a teapot or heatproof mug. Once the water reaches a rolling boil, pour it over the dried rosemary leaves. Cover the teapot or mug with a lid or a small plate to trap the steam and let the rosemary steep for about 5-10 minutes. Strain.
Traditional Use
