Origin: Bulgaria
Botanical Name: Melilotus Officinalis
Other Names: Yellow Sweet Clover, Melilot, King's Clover, Yellow Melilot, Sweet Lucerne
Melilotus officinalis, commonly known as yellow sweet clover or yellow melilot, is a flowering plant in the Fabaceae family. It's native to Eurasia and North Africa but has been introduced to many other parts of the world. This plant has high protein content and palatability. It's also known for its pleasant fragrance, which intensifies as the plant dries. Melilotus officinalis can be an annual or biennial plant, and is 120–180 centimetres (4–6 ft) high at maturity. Plants have a characteristic sweet odor. Sweet clover herb tea has a mild, sweet flavor with hints of vanilla and hay-like undertones. Some people find it similar in taste to green tea but with its unique aroma and flavor profile.
Using: Use about 1 to 2 teaspoons of dried sweet clover melilot herb per cup of water. Once the water is near boiling, pour it over the herbs in the teapot or cup. Steep in the hot water for about 5 to 10 minutes. Strain.
