ORIGIN OF BULGARIA
Botanical Name: Sinapis Alba
Other Names: Yellow Mustard Seeds, Sinapis alba, Brassica alba, Sarson, Safed Sarson, Mild Mustard

White mustard (Sinapis alba), also known as yellow mustard, is a plant in the Brassicaceae family, commonly grown for its seeds, which are used to make mustard condiments, spices, and oils. The plant is native to the Mediterranean region and has been cultivated for thousands of years for culinary. The white mustard plant is an annual herb that can grow up to 70-100 cm tall. It has bright green, lobed leaves and produces small, pale yellow flowers that develop into seed pods. The seeds are round and pale yellow to light brown in color, smaller than a pea. They have a mild flavor compared to other mustard seeds. White mustard seeds have a milder, slightly tangy flavor compared to their yellow and brown counterparts. When ground, they can add a subtle heat and nuttiness to dishes.

Usage: Crush the 1 teaspoon dried white mustard seeds slightly to help release their flavors and beneficial compounds. Place the crushed seeds in a teapot or cup. Pour 1 cup of boiling water over the seeds. Cover and let it steep for about 5 to 10 minutes. Strain.

Traditional Use

White (yellow) mustard is the mildest of the mustard seeds and the base of classic table mustard. The seeds are traditionally used:

  • In pickles, marinades, sauerkraut and spice blends
  • To add a mild, nutty heat when toasted in oil
  • In warming foot baths in the cold season
